Four new restaurants confirm locations in Eagle Mountain

Eagle Mountain’s retail landscape is set to expand in the coming months, with four popular restaurants officially announcing plans to open locations in the City Center area along Pony Express Parkway. 

Panda Express, Costa Vida, Papa Murphy’s and Melty have each confirmed their projects and begun preparing for construction and build-out. All four are expected to open within the next six months.

For residents, the additions signal continued momentum in Eagle Mountain’s effort to diversify its commercial base and ensure that daily conveniences are available closer to home. 

Economic Development Director Abby Ivory says these projects represent another step toward meeting the needs of a fast-growing community.

“I like that this offers more choices for our residents,” Ivory said. “Closer proximity so there’s less travel to Saratoga Springs.”

The cluster of new restaurants will sit in City Center at Town Center Marketplace, an area that has seen steady development over the past few years. With service-oriented businesses, retail offerings and new family-friendly amenities emerging nearby, the restaurants are expected to bring additional foot traffic and strengthen the commercial mix along Pony Express Parkway.

Ivory says the City is focused on approaching growth intentionally, supporting businesses that enhance everyday life.

“We’re working to get more things to do, places to shop and thinking of all aspects of our residents’ lives to work, shop, and play all in Eagle Mountain,” she said.

City officials say expanding the local dining scene also helps capture sales tax revenue that currently leaves the community when residents drive to surrounding cities for meals. Keeping more spending within Eagle Mountain supports local services, contributes to long-term financial stability, and further incentivizes businesses to invest in the area.
